Simply Scrumptious: Chicken Chilli in a Pumpkin

1. Prepare Pumpkin


2. Combine in large saucepan or bowl:
1 15 oz. can black beans
1 16 oz. can pinto beans
1 14 1/2 oz. can diced tomatoes
1 6 oz. can tomato paste
1 12 1/2 oz. can chicken

3.blend in blender and then add to the other ing:
1 7 oz. can green chilies
1 green bell pepper cored and diced
1 zucchini squash washed and shredded
1 cup chicken broth

4. Add spices as desired:
I used:
2 tsps. chili powder
2 tsps. parsley
2 tsps. cilantro
minced garlic
1 1/2 tsps. cumin
1 1/2 tsps. Italian seasoning
1 bay leaf (remove before serving)

5: Ladle Mixture into prepared pumpkin, cover and bake at 350 until pumpkin is tender

Truly Tender: "Sounds Like a Plan"

 I went in to check on little Lady Slipper since she had cried out my name from her bed.  She needed a drink of water, and then two more. . . then I tucked her back in and promised to come back to see her again in a few minutes.  I heard a very soft reply but couldn't understand it.  As I turned back and bent down close to her she repeated the words in her sweet and tired voice: "Sounds like a plan."  I smiled as I left. It is so fun when she surprises me with these grown-up phrases.

My Own Moroni Man: "Hello Beautiful"

As I was doing my hair for the morning, Lady Slipper came bouncing in and said: "Hello Beautiful!"  I think I looked at her with a surprised expression on my face because she looked at me for a second and then said "Daddy calls you that!"

I instantly was reminded of many other ways my hubby shows me how much I am loved and I thought of this quote and how he is fulfilling it:

"How can a father raise a happy, well-adjusted daughter in today’s increasingly toxic world? The answer has been taught by the Lord’s prophets. It is a simple answer, and it is true—“The most important thing a father can do for his [daughter] is to love [her] mother.”1 " ("Love Her Mother," Elaine S. Dalton, October 2011 General Conference

I ran out and related the story to my loving husband and thanked him for helping me feel so loved.
